The Humble Crumble

Rhubarb CrumbleI’m drowning in a sea of cooking apples at the moment, and I’m not actually that keen on apples. I also don’t like fruit with savoury dishes… and I’m not particularly good at baking.

The answer is: the humble crumble. And here's one the easiest crumble recipes I could find.

I've used this recipe to make rhubarb, plum and apple crumbles; just lengthen the initial cooking time depending on the density of the fruit. In this instance, I peeled and cubed the apples, covered them with water and sugar, then cooked them on a baking tray on a low heat for about half an hour. They were soft by the time I took them out, so I drained off some of the liquid and mushed them up with a teaspoon of ground ginger.

Then I topped the mushed apples with the crumble mix and put them back in the oven on Gas mark 4 for about 50 mins. Delicious with Waitrose Seriously Creamy Madagascan Vanilla custard.

I still have two bags full of cooking apples lurking at the bottom of the freezer; more apple recipes are likely to follow...
